THE VIBE

Spirits and Oysters are as kindred as it gets. So one of the greatest hits of New York & Miami Oyster Week has always been ShuckEASY! Pairing Spirits & Oysters properly can be a transcendent experience. In the intimate setting of Raw Lab this will be a Master Class by Master Mermmelier Kevin Joseph, Owner/Chef @ Raw Lab, Founder & Executive Producer @ Oyster Week. Expect an oyster / raw bar / spirits experience like no other, minus the Mixology. Spirits will be sipped neat and applied to oysters as toppings with a host of other surprises, like our signature Sprited Pearls. Roe will be explained, explored and sampled as well as compared to fine caviar. While this is NOT a “dinner” it will offer quite a bit to eat. Expect more of edu-taining seminar kind of a feel.

This is kind of a big deal. Here we compare and contrast all 5 species of oysters commercially available in the US. We explain the difference between varieties and species and guide you on how, where and when to look for the 3 rarest varieties (Kumamoto, Belon & Olympia).This is AN INCREDIBLY RARE OPPORTUNITY and something every oyster aficionado should experience. The signature salmon dish features 60 South Salmon, the finest farmed salmon in the world and by many metrics, perhaps the finest salmon of any kind. Its not only the most delicious salmon we’ve ever found but its also the safest, healthiest, most responsible and most sustainable salmon we’ve ever seen. If you love salmon you’ll want to have a seat at the table for this dish where the salmon becomes the taco shell and delivers fresh low country furikake, purple basil and squid ink stained tobiko with lemon infused avocado oil & shitake mushroom soy sauce.
