An evening dedicated to celebrating oysters, and providing an immersive experience to protect, restore, and sustain coastal ecosystems. Featuring oyster farms from across the Carolinas, curated menus from some of Charleston’s most prestigious chefs, wine, beer, live music, and your chance to win amazing items from our exclusive silent auction.
This is the primary annual fundraising event for Toadfish Conservation Coalition and 100% of proceeds directly support oyster restoration in South Carolina. So come support us, clean water, and oysters!

Join us as we usher in Oyster Roast Season in The Low Country and explore a host of raw and grilled oyster selections paired with not just great craft beer but a host of other great libations. This family friendly event is perfect for those new to the low-country and deliver a legit South Carolina Oyster Roast experience. And the raw bar will be second to none.

Spirits and Oysters are as kindred as it gets. So one of the greatest hits of New York & Miami Oyster Week has always been ShuckEASY! Pairing Spirits & Oysters properly can be a transcendent experience. In the intimate setting of Raw Lab this will be a Master Class by Master Mermmelier Kevin Joseph, Owner/Chef @ Raw Lab, Founder & Executive Producer @ Oyster Week. Expect an oyster / raw bar / spirits experience like no other, minus the Mixology. Spirits will be sipped neat and applied to oysters as toppings with a host of other surprises, like our signature Sprited Pearls. Roe will be explained, explored and sampled as well as compared to fine caviar. While this is NOT a “dinner” it will offer quite a bit to eat. Expect more of edu-taining seminar kind of a feel.

This will be the finest raw bar / oyster experience ON EARTH ON THIS DAY, without question. And that is not JUST for the fact that the setting is amazing but also because the food & beverage offering is truly a culinary master stroke. We created International Oyster Day as an alternative to National Oyster Day (Aug 5) which is far and away the worst time of the year to feature oysters due to several factors (like the fact that two of the five most important oyster species are not even commercially available at this time).
